MONOCULTIVAR

Monocultivar extra-virgin olive oil made with a single variety (cultivar) of olives. Olives are not all the same, in fact: in Italy there are 395 different varieties officially recorded in the Olive cultivation register, many of which native varieties (in other words, not imported) and very much rooted in the area of origin.

The VAL DI LAMA farm has succeeded, after an accurate selection, in obtaining excellent olive varieties that have perfectly settled in the area. These varieties are ;

leccino

The productivity level is constant with an average yield (13-15%). It is golden yellow in colour with tinges of green, and has a fresh, slightly fruity flavour. Some discern hints of aromatic herbs, chicory, lettuce, artichoke and almond.

pendolino

A generally early variety with a relatively high yield (12-14%). This oil is delicate and fragrant, with hints of almond and slightly bitter and pungent nuances.

moraiolo

The productivity level is high and constant with a good yield of oil (19-22%); It is of a high quality (high content of polyphenols) and appreciated for its fruity scent with bitter and pungent nuances.

maurino

The productivity level is modest but (slightly) alternating, with a good yield of oil (12-14%). The oil is considered of an excellent quality, generally sweet and moderately fruity.

frantoio

The productivity level is high and constant, with a good yield of oil (15-17%). Dark green in colour with golden reflections, fine, aromatic, savoury and fruity, with pungent and bitter nuances. Some discern notes of fresh grass, unripe apples, artichoke, marjoram, rosemary, lettuce, celery and almond.

mignolo

Native to the area around Florence, this variety has spread sporadically to almost all parts of Tuscany. The drupes grow in characteristic clusters. The yield of oil is good (13-15%).

In its own oil press, the farm extracts an excellent monocultivar oil from this variety. Each type of oil produced has a different flavour and scent. Skilled hands, trained with years of experience, blend these products perfectly to obtain a series of fruity oils that are full of well-balanced flavour.
